Bread and similar
The wide variety of traditional bread that is produced on the islands of the Azores is certainly linked to the Festas do Espírito Santo, as a common denominator of Azorean culture. In evocation of the “Terras de Pão” so often transformed into “Mistérios de Lava”, authentic processions of bread and their distribution to the people incorporate these festivities in honor of the Holy Spirit. It is not just the popularly called “Pão de Casa”, but the entire variety of breads, with a sweet or savory flavor, in the most diverse formats: bread, kneaded dough, sourdough bread, eve cakes; thread or ring, circular or elongated, individual or for a family. In a more profane sense and linked to the self-sustenance of Azorean families, alongside the basic wheat bread, the production of yeast cakes, "bolo da sertã" or brick cake, bread or cornbread appears.
