The Queijaria Pico Redondo was established in 2006, producing, at the time, only the traditional fresh cheese and, shortly thereafter, the cured cheese.
The creations of D. Ilda Henriques, the fresh and cured cheeses, of artisan manufacture, makes this dairy a mandatory stop for all who want to visit the idyllic valley of Fajãzinha.
With a relatively short curing time, the cow cheese, produced here, became part of the cuisine of “florentinos”.
